INGREDIENTS


1 large zucchini, sliced into rounds

Rawcho Cheesy Sauce:
1cup raw organic Cashews
1large Red Bell Pepper, chopped
1/2 Jalepeno
1/2 cup Nutritional Yeast (found in the bulk department of most health food stores)
1 teaspoon cold pressed organic olive oil
1teaspoon high quality Sea Salt
1-2cups pure water

Sour Creamy:
1/4cup raw organic cashews
1/2-3/4cup pure ICE water
2tablespoons unfiltered Apple Cider Vinegar

Guacamole:
1large avocado, cubed
1/4cup cilantro, chopped
1/4cup chives, chopped
1lime, juiced
1clove garlic, minced
Salt & pepper to taste
1 medium heirloom tomato, chopped

Chef Anna’s nachos are the ultimate indulgence without any of the guilt. This creative no-cook recipe is easy to make, fun & delicious not to mention raw, vegan, gluten-free and dairy-free (though you truly don’t need to be raw or vegan to enjoy them)! If you haven’t tried a raw food recipe before this is a great intro and raw foodies claim to enjoy health benefits abound…that’s something we could all use an extra helping of…Salud!

METHOD

In a blender combine all Rawcho Cheesy ingredients and blend until completely smooth and slightly warm. Add additional water as needed. Set aside at room temperature. 

Next, combine Sour Creamy ingredients in blender and blend until completely smooth. Set aside in refrigerator.

Now, combine Guacamole ingredients in a bowl. Mash together using a fork.

Finally, arrange zucchini slices on a plate. Generously sauce with Rawcho Cheesy sauce, add guacamole and drizzle with Sour Creamy. Top with chopped tomato.
